Sweet Potato Wedges

Yesterday a good friend of mine pointed out the fact that my regular What’s Cooking Wednesday post was MIA last week. You know what my first thought was? Instead of feeling guilty about skipping a week, I felt like pumping my fist in the hear and shouting “Yes!!! Someone actually reads my blog!”.

This week’s feature will be a quickie. I have a super busy day full of non-blogging stuff to take care of.

One of my favourite side dishes is baked sweet potato wedges. Not only do they make a tasty snack, they are really easy to make.

Baked Sweet Potato Wedges

  • 4-6 medium/large sweet potato (not yams) cut into wedges
  • Garlic powder
  • Extra Virgin Olive Oil
  • Salt, Pepper and dried spices to taste

Directions: Preheat oven to 375F. Place sweet potatoes on a parchment lined baking sheet. Drizzle with extra virgin olive oil. Sprinkle sea salt, pepper, garlic powder and your favourite dried spices over the wedges. Toss and spread out evenly on baking sheet. Bake for 25 min. Remove from oven. Stir and flip sweet potatoes so they will brown evenly. Return to oven and bake for another 15-20 minutes or until wedges are golden brown.

Mmmm,…I love sweet potatoes and love even more how easy and delicious this looks. Thanks for sharing,….making me hungry. Oh so hungry, lol.
