Orange Cranberry White Chocolate Scones - What’s Cooking Wednesday

The perfect tea time companion

I love the smell of warm butter and orange zest together. It’s such a lovely, comforting fragrance and the flavour it adds to baking and other foods is pretty yummy too. By introducing vanilla, a handful of cranberries and white chocolate to the already wonderful combination of orange and butter, I think I have discovered tea time bliss in my latest baking experiment.

Orange Cranberry White Chocolate Scones. The sweet, tart and creamy flavours blend beautifully in this buttery, melt in your mouth treat. I know I’m not being modest here but these scones are nothing like the ones you buy at Starbucks or Second Cup - they are WAY better.

Scones are one of the easiest things to make. Just remember to use a light hand when kneading and shaping the dough. If you handle the dough too much, your scones be a bit on the hard side.

My recipe is an adaptation of a recipe in The Complete Canadian Living Baking Book. I used the basic recipe for buttermilk scones and added my own flavours.

Orange Cranberry White Chocolate Scones

  • 2 1/2 cups all purpose flour
  • 2 tbs granulated ugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup dried cranberries
  • Zest of 1 orange
  • 1/4 cup of white chocolate chips or chunks
  • 1/2 cup cold butter, cubed
  • 1 cup buttermilk
  • 1 egg

In large bowl, whisk together dry ingredients - flour, sugar, baking powder, baking soda and salt. Using pastry blender, cut in butter until crumbly. Stir orange zest, white chocolate and dried cranberries into flour mixture. In a separate bowl, whisk buttermilk and egg together - pour over the flour mixture. Stir with fork to form soft ragged dough. With floured hands, press dough into a loose ball. On floured surface, knead and pat dough out into 10″ x 7″ rectangle. Cut rectangle into 6 squares, then cut each piece diagonally in half. Place triangles on parchment lined baking sheet. Bake in centre of 400F oven until golden, about 18-20 minutes. Transfer to rack and let cool. Makes 12 scones.
