Baked Salmon Fillets

Quick and easy to prepare, baked salmon fillets are a favourite in this family. Completely kid approved, as both my girls eagerly went for seconds.

Serve with roasted vegetables and rice (brown in this case)

You will need

  • 4 salmon fillets
  • 1/3 cup mayonnaise
  • 1/4 cup chopped green onions
  • Zest of 1 lemon
  • Garlic powder
  • Salt and Pepper to taste

Rinse and pat dry salmon fillets. Rub a bit of garlic powder into each fillet. Arrange the salmon skin side down on a parchment lined baking sheet. Set aside. In a small bowl or measuring cup, stir together mayonnaise, green onions and lemon. Spread the sauce on top of each fillet. Bake fish in a preheated 400 degree oven for 12-15 minutes or until salmon flakes off easily when checked.

DIY Girl Says:

  • For a lighter version, eliminate the mayonnaise and rub fillets with extra virgin olive oil. Sprinkle the lemon zest and green onions on top before baking.
  • You can easily change up the flavours. Try a teriyaki sauce or an Italian dressing for something different.
