Every once in awhile I crave a big salad and each time this happens I think of Seinfeld (the show, not the man!)…and anyone who knows me well, knows that I often say “Hey, this is like that episode of Seinfeld”. My life as a TV show.
Elaine: How about a big salad?
Hilde: A big salad?
Elaine: It’s a salad, only bigger, with lots of stuff in it
I love big salads! Throw in sliced chicken breast or grilled beef and you have a satisfying meal. Yum!
The nice thing about putting together a salad is anything goes (in my humble “unprofessional” opinion of course). If you like it and think it’s a tasty combo then by all means, toss it right in with the greens.
My big salad consists of organic mix greens and lettuce with sliced avocados, tomatoes, ham, hard boiled egg, dried cranberries and toasted sunflower seeds. I had some grated cheese in the fridge so I threw a bit of that in too.
You know what goes really well with a big salad? Soup. But that’s a whole other post and another episode of Seinfeld.
